The Gift of Being Yourself by David S. Benner
Being Known Podcast with Curt Thompson, M.D.
Ingredients for Mary’s Popovers: Makes about 8
- 2 eggs
- 1 cup of milk
- 1 cup of flour
- A pinch of salt
Instructions:
- Preheat your oven to 425°F (220°C).
- In a mixing bowl, combine:
- 2 eggs
- 1 cup of milk
- 1 cup of flour
- A pinch of salt
- Mix these ingredients together until you have a smooth batter.
- If you want to make 2 dozen popovers, just triple the amount of all the ingredients (6 eggs, 3 cups of milk, 3 cups of flour, and a pinch of salt).
- Grease your popover pans or cupcake pans if you don’t have popover pans.
- Fill each cup of the pan about halfway with the batter.
- Place the pans in the preheated oven and bake at 425°F (220°C) for 20 minutes.
- After 20 minutes, reduce the oven temperature to 325°F (160°C) and bake for another 20 minutes.
- When they’re golden brown and puffed up, your popovers are ready to enjoy!
Note: If you don’t have popover pans, cupcake pans work just fine. Your family will love these!
Yum!! I remember your popovers! So light and fluffy! Thanks for sharing.
